  • 240 g unsalted butter
  • 2 tbsp water

Brown the butter in a pan. Once browned, add 2 tbsp water and cool in the fridge for 10 minutes.

  • 90 g plain flour
  • 1.5 tsp salt
  • 1 tsp baking soda

Step 2

Sift the bread flour, plain flour, salt, and baking soda together into a mixing bowl.

  • 220 g soft dark brown sugar
  • 100 g caster sugar
  • 2 tsp vanilla extract

Step 3

Cream the browned butter, sugars, and vanilla extract together until fluffy.

  • 1 large egg
  • 1 large egg yolk

Beat the egg and egg yolk into the butter and sugar mixture.

Gradually stir in the sifted dry ingredients.

  • 140 g milk chocolate chopped

Fold in the chopped chocolate.

Shape the dough into balls, place on a tray, and refrigerate for 1 hour.
