Add bread flour and salt. Mix with the yeast mixture until a shaggy dough forms.

Knead the dough for 10 minutes until smooth. Place in an oiled bowl, cover, and let rise until doubled in size (about 1 hour). Punch down to deflate.

Divide dough into N pieces. Shape into balls by under-wrapping, then swirl on an un-floured surface to seal the bottom. Place on a baking sheet, cover, and rest for 10 minutes.
Step 5
Preheat oven to 220°C. Bring a pot of salty water to a boil.

Make holes in the center of the dough balls by piercing a finger through then placing a finger in hole from either side and slowly spinning it to increase hole size.
Step 7
Boil for 1-2 minutes per side (longer boiling yields a chewier bagel).

Brush boiled bagels with egg wash and add desired toppings. Bake for 20 minutes.
Notes
Just pushing down on one side of a bagel while its boiling should flip it.
